So let's make it in a muffin tin!
Craig said he liked that it was easy to take these for lunch; it's convenient to just grab one or two muffins and pup 'em in the oven or microwave.
Meatloaf muffins
2 lbs of ground beef
2 large eggs
1 medium onion, diced
1 medium orange pepper, diced
2 T coconut oil
2 t fresh cracked sea salt
1 t ground pepper
an assortment of spices of your choosing. about 1 t of each
some organic ketchup for glaze
Preheat your oven to 350 degrees. In a small skillet over medium heat, melt down your coconut oil and cook up your onion and pepper for about 5 minutes. In a large bowl combine your beef, eggs, salt, pepper, other spices and veggies together. Use your hands. It's necessary. Portion out some meat, about the size of a baseball, and plop it into your muffin tin. Add a little bit of ketchup to the top of each muffin. Place your muffin tin on a baking sheet and bake for about 35-45 minutes.
Eat alongside your favorite veggie side, and you've got yourself a delightful paleo meal.
