Stuffed Mushrooms
1.5ish pounds button mushrooms
12 oz sausage (I used chicken sausage)
6 oz cream cheese
salt, pepper to flavor
handful of chopped scallions
Preheat your oven to 350 degrees. Hollow out your mushrooms and line them on a foil-lined baking sheet, hollowed end up. Cut the casing off of your sausage and cook them over medium-high heat in a skillet until they're cooked through. Don't drain the fat! Add everything from your skillet into a bowl with the cream cheese, salt, pepper and scallions. Let cool slightly, then stuff your mushrooms. Bake for about 30-35 minutes or until they're good and tender.


ok i love mushrooms but always have problems incorporating them into meals - I love this idea because then they can be used as little snacks or appetizers. I'll have to try this out!
